Technical Overview
The food and beverage industry requires water and process fluids of the highest sensory and microbial quality. Beyond simple ingredient water (used for soft drinks or brewing), “process water” is used for the decolorization and de-ashing of liquid sugars, juices, and organic acid streams.
Decolorization and Ion Exchange
In the refining of sugar (sucrose) and starch sweeteners (HFCS), color removal is a paramount technical challenge. High-molecular-weight organic compounds, often characterized by the ICUMSA scale, must be removed to produce a clear product. This is typically achieved using Ion-Exchange (IX) resins or Granular Activated Carbon (GAC). Strong Base Anion (SBA) resins in the chloride form are the industry standard for sugar decolorization. The choice between macroporous styrenic and acrylic resins depends on the specific color precursors and the required regeneration efficiency.
Ingredient Water and Organoleptic Integrity
For beverage production, water must be free from “Off-Flavors” and “Off-Odors.” Chlorine, chloramines, and geosmin can negatively impact the organoleptic profile of the final product. Treatment typically involves high-quality RO to provide a consistent mineral base, followed by GAC for polishing. Alkalinity control is particularly critical in the brewing and soft drink sectors, as it affects the “bite” and carbonation stability of the beverage.
Regulatory and Food Safety Trends
The Food Safety Modernization Act (FSMA) and GFSI standards (like BRC and SQF) emphasize the “Food-Grade” status of all treatment chemicals and components. All resins, membranes, and lubricants must comply with FDA 21 CFR or equivalent EU food-contact regulations. A growing trend is the use of “Green Regeneration”—minimizing chemical consumption and recovering regenerant brine. For example, Nanofiltration (NF) can be used to separate organic color bodies from the spent salt brine of an IX system, allowing the brine to be reused multiple times, significantly reducing the environmental footprint of the refinery.
